Tzatziki Potato Salad

Ingredients

Simply Potatoes® Quartered Red Skin Wedges #12590 32 oz.
Greek Non Fat Yogurt 6 oz
Mayonnaise 2 oz
Garlic Powder 2 tsp
Cucumber, peeled and sliced ½ inch cubes 12 oz
Mint, chopped ½ cup
Dill, chopped ¼ cup
Lemon, zested 1 ea
Kosher Salt 1 tsp
Black Pepper 1 tsp

  • Versatile side to many proteins.
  • Use any Simply Potatoes® wedge variety with this recipe. 

Directions

  1. In a large bowl whisk together Yogurt, Mayonnaise, Garlic Powder and add Simply Potatoes Red Skin Wedges (cooked) and Cucumbers.
  2. Stir in Mint and Dill and season with Salt and Pepper.  Garnish with Lemon Zest.
  3. Serve Chilled.
