Three Pepper Potato Ramekin

Simply Potatoes® 3/4" Large Diced Potatoes #15150 2 oz.
Simply Potatoes® Deluxe Mashed Potatoes #15770 8 oz.
pickled jalapeño pepper, diced 2 oz
smoked paprika 1 tbs.
roasted red peppers, diced 2 oz.
diced onion 2 oz.
cream cheese 2 oz.
mayonnaise 1/4 cup
mozzarella cheese, shredded 2 oz.
- Serve with chips, crostini, bread sticks, crudités or baguette.
- Use any Simply Potatoes® mashed and diced variety with this recipe.
- Preheat oven to 400°F.
- In large bowl, mix all ingredients except mozzarella cheese.
- Divide into two ramekins.
- Top with mozzarella. Place in hot oven.
- Bake 12 minutes, or until bubbling. Serve hot.
