Roasted Potatoes Benedict

Ingredients

Simply Potatoes® Southern Style Diced Potatoes #15110 1 lb. 4 oz.
Papetti's® Pasteurized Shell Eggs #86990, poached 4
canola oil 2 Tbs.
kosher salt 1 tsp.
ground black pepper 1/4 tsp.
yellow onions, diced 3 oz.
green peppers, diced 3 oz.
granulated garlic 1/4 tsp.
butter 1 Tbs.
prepared smoked paprika hollandaise sauce, heated 6 oz.

  • Perfect base for poached, scrambled or fried eggs.
  • Use any Simply Potatoes® diced variety with this recipe.

Directions

  1. Heat 10" nonstick sauté pan over medium heat. Add oil.

  2. Add diced potatoes and toss. Season with salt and black pepper.

    Cook 10 minutes, stirring occasionally.

  3. Add onions, green pepper and granulated garlic. Toss mixture.

  4. Cook another 5 minutes, or until potatoes are tender, stirring occasionally.

  5. Add butter. Cook additional 5 minutes.

  6. To prepare 1 serving, arrange 4 oz. potato mixture on plate.

  7. Top potatoes with 1 poached egg.

  8. Finish with 1.5 oz. hot hollandaise sauce. Serve immediately.
