Potato and Corn Succotash

Simply Potatoes® Red Skin Diced Potatoes #15170 32 oz.
Butter 1 oz
Corn, frozen 16 oz
Edamame 16 oz
Garlic Powder 2 tsp
Chipotle in Adobo Sauce 1 oz
Greek Non Fat Yogurt 8 oz
Italian Parsley, chopped ¼ cup
Kosher Salt 1 tsp
Black Pepper 1 tsp

Quick Tips

  • For a breakfast version, top Succotash with a fried egg.
  • Use any Simply Potatoes® diced variety with this recipe. 


  1. In a pan over medium high heat melt butter and sauté Simply Potatoes Red Skin Diced Potatoes until golden, about 5 minutes.  Add Corn, Edamame and garlic and cook for 2 more minutes.  Season with Salt and Pepper and set aside.
  2. In a small bowl combine Chipotle Adobo Sauce and Greek Yogurt.
  3. Divide Succotash in 8 portions and drizzle with Chipotle Yogurt Sauce and garnish with Italian Parsley.
