Ingredients

Simply Potatoes® Southern Style Diced Potatoes #15110 32 oz.
Papetti’s® Breakfast Blend Scrambled Egg Mix #84254, scrambled 32 oz
Olive Oil 1 Tbsp
White Onion, diced 8 oz
Cilantro, chopped ½ cup
Lime, cut in half 1 ea
Chorizo (or Shredded Chicken, or Bacon), cooked 16 oz
Tomato Salsa 8 oz
Cheddar Cheese, shredded 8 oz
Tomatoes, diced 8 oz
Jalapeno, sliced 16 slices
Kosher Salt 1 tsp
Black Pepper 1 tsp

Quick Tips

  • In addition to meat substitutes, consider offering alternate salsa and cheese options for additional customization potential.
  • Use any Simply Potatoes® diced variety with this recipe. 

Directions

  1. In a pan over medium high heat, heat olive oil and sauté Simply Potatoes Diced Potatoes per instructions until golden.  Season with salt and pepper.
  2. Combine diced onions, ½ of cilantro and the juice from 1 lime and set aside.
  3. In a serving bowl scoop 4 oz Simply Potatoes Diced Potatoes, 4 oz Papetti’s Scrambled Eggs and 2oz Chorizo (or meat of choice).
  4. Top each with 2 oz Tomato Salsa, Cheddar Cheese, Diced Tomatoes, Onion & Cilantro Lime mixture and garnish with sliced Jalapenos.
