Ingredients

Simply Potatoes® Homestyle Mashed Potatoes #15750 48 oz.
Red Onions, sliced 16 oz
Jalapenos, sliced 2 ea
Red Wine Vinegar 6 oz
Sugar 2 tsp
Yellow Mustard 4 oz
Cayenne ½ tsp
Pulled Pork, heated 16 oz
Texas Style BBQ Sauce 8 oz
Cilantro, chopped ½ cup
Kosher Salt 1 tsp
Black Pepper 1 tsp

Quick Tips

  • If needed, plate separately for individual servings.
  • Use any Simply Potatoes® mashed variety with this recipe. 

Directions

  1. Combine Red Onions, Jalapenos, Red Wine Vinegar and Sugar and set aside for 15 minutes.
  2. In a large bowl combine Yellow Mustard, Cayenne and Simply Potatoes Mashed Potatoes. Mix well and season with salt and pepper.
  3. In a separate bowl combine Pulled Pork and BBQ Sauce.
  4. In steam well serve Creamy Mustard Mashed Potatoes topped with BBQ Pulled Pork and garnish with and marinated Red Onions and Jalapenos and fresh Cilantro.
